Dutch apple cake recipe details
Ingredients
2 large | eggs |
150 g | caster sugar, plus 1 tbsp to sprinkle on top |
100 g | butter |
½ tsp | vanilla extract |
4 tbsp | milk |
150 g | plain flour |
½ tsp | ground cinnamon |
2 ¼ tsp | baking powder |
2 medium | cooking apples, peeled, cored and thinly sliced |

Instructions
Preheat oven to Gas Mark 8, 400°F, 200°C.Line the base and sides of an 8×8 inch, 20x20cm square cake tin with baking parchment.
Whisk eggs, sugar and vanilla in a large bowl until thick and the whisk leaves a trail, about 5 minutes with an electric whisk.
Melt butter in a medium pan with the milk, and then pour onto eggs, whisking continuously. Sift in flour, cinnamon and baking powder and fold carefully into the batter, breaking up any flour lumps.
Pour into prepared tin and smooth surface.
Arrange apple slices over batter – they will sink to the bottom during cooking. Sprinkle a tablespoon of sugar and bake for 10 minutes. Reduce temperature to Gas Mark 4, 350F, 180C and bake for another 20-25 minutes or until well risen and golden brown.
Remove from oven and allow to cool in the tin. Cut into 2-inch, 5cm squares to serve, warm with cream.
