Ingredients
25 g | butter |
25 g | plain flour |
150 ml | milk |
175 g | Cheddar cheese, grated |
150 ml | ale, eg Newcastle Brown, or Guinness |
1 tsp | English mustard, or about ½ tsp mustard powder |
2 tsp | Worcestershire sauce |
salt, to taste | |
fresh ground pepper, to taste | |
2 medium | eggs, yolks only |
4 slice(s) | bread |
Instructions
To make a roux, melt the butter in a saucepan on a low heat and the flour until it comes together; do not allow to colour.In a separate heat to milk, without boiling and pour over roux. Bring to boil whiles stirring continuously to prevent burning and formation of lumps. Add the cheese, beat together and allow to cool.
In a clean pan, pour the ale, add mustard or mustard powder and Worcester sauce. Mix together, heat on moderate setting and allow to thicken. Add to cheese sauce. Season and beat in egg yolks.
Spoon onto bread and place under grill until topping is bubbling. According to the size of your grill, it may be possible to toast 2 slices only or all 4. Cut diagonally once or twice to form wedges. Serve with additional Worcestershire sauce to be added if desired, with tea or coffee for a mid-morning snack.
