Watermelon and Feta Salad recipe

Ingredients
750 g | watermelon, seedless |
200 g | Feta cheese, 2 cm cubes |
20 | olives, Kalamata, pitted and finely sliced |
12 leaves | mint, finely sliced |
2 stalks | celery, finely sliced |
2 tbsp | vinegar, red wine |
2 tbsp | olive oil, extra virgin |
some | black pepper, freshly grounded |
Instructions
Remove the rind from the watermelon and cut the flesh into bite-sized pieces.
Arrange on a platter and scatter with the olives, mint and celery.
Combine vinegar and olive oil and drizzle over the salad. Season to taste with pepper.
