Ingredients

750 g watermelon, seedless
200 g Feta cheese, 2 cm cubes
20  olives, Kalamata, pitted and finely sliced
12 leaves mint, finely sliced
2 stalks celery, finely sliced
2 tbsp vinegar, red wine
2 tbsp olive oil, extra virgin
some black pepper, freshly grounded

Instructions

Remove the rind from the watermelon and cut the flesh into bite-sized pieces.

Arrange on a platter and scatter with the olives, mint and celery.

Combine vinegar and olive oil and drizzle over the salad. Season to taste with pepper.
