Ingredients
3 medium | eggs |
200 g | courgette, roughly grated |
250 g | carrots, roughly grated |
salt and pepper | |
150 g | mushrooms, sliced |
1 | onion, chopped |
200 g | frozen peas |
400 g | cream cheese |
250 g | flour |
4 tbsp | oil |
2 tbsp | butter, melted |
125 ml | water |
Instructions
In a bowl, combine the flour with an egg, a pinch of salt, 2 tablespoons of oil and the water. Knead until the dough is smooth and pliable. Wrap with cling film and place into the fridge for 30 minutes.In a pan heat the remaining oil. Fry the mushrooms for 3-4 minutes. Add courgette, carrots, onions and the peas and stir-fry for 5 minutes. Season to taste with salt and pepper.
In a bowl mix the cream cheese with the remaining eggs and a pinch of pepper.
Thinly roll out the dough on a floured surface to a rectangle. Spread the dough with melted butter and spread half of the rectangle on the long side in front of you with the cream cheese mixture. Place the vegetables on top of the cheese. Roll up from the long side and transfer the strudel onto a lined baking tray, seam side down. Brush with butter.
Bake in the preheated oven at 180°C for 30-40 minutes.
