Ingredients

85 g watercress
1 medium mango, peeled and thinly sliced
350 g chicken breast, cooked and diced
150 g asparagus tips
100 g red grapes, halved
3 tbsp pumpkin seeds
1 large orange, zest and juice
½ tsp dried chili flakes
1 tsp honey
salt and freshly ground black pepper, to taste

Instructions

Cook asparagus tips in boiling water for 3 minutes. Remove from heat and rinse in cold water.

In a bowl, mix together asparagus, mango, grapes, chicken, watercress and pumpkin seeds.

In a small container with lid, mix together orange juice and zest, chili flakes and honey. Season with salt and pepper and shake well.

Sprinkle the dressing over the salad.
