Watercress and mango salad recipe details
Ingredients
85 g | watercress |
1 medium | mango, peeled and thinly sliced |
350 g | chicken breast, cooked and diced |
150 g | asparagus tips |
100 g | red grapes, halved |
3 tbsp | pumpkin seeds |
1 large | orange, zest and juice |
½ tsp | dried chili flakes |
1 tsp | honey |
salt and freshly ground black pepper, to taste |
Instructions
Cook asparagus tips in boiling water for 3 minutes. Remove from heat and rinse in cold water.In a bowl, mix together asparagus, mango, grapes, chicken, watercress and pumpkin seeds.
In a small container with lid, mix together orange juice and zest, chili flakes and honey. Season with salt and pepper and shake well.
Sprinkle the dressing over the salad.
