Ingredients
250 g | walnuts |
100 g | dark chocolate |
100 g | almond paste, soft |
3 | egg whites |
80 g | sugar |
1 tsp | orange zest |
2 tsp | cocoa powder, sieved |
35 | baking wafers (40mm in diameter) |
Instructions
Briefly roast the walnuts then chop the nuts and the chocolate in small pieces. Preheat the oven to 180°C.Crumble the almond paste and stir together with one egg white until smooth. Whisk the two remained egg whites stiff and let the sugar trickle in while still whisking. Stir the orange zest, the cocoa powder and 1/3 of the beaten egg whites into the almond paste mixture. Then gently fold in the remained beaten egg whites, the walnuts and the chocolate.
Arrange the baking wafers on a baking tray and extrude a little heap of the macaroon mixture on top of each. Bake in the preheated oven for approximately 20 minutes. Cool completely.
Store in an airtight container.
