A delicious late spring salad that can be prepared with leftover corn and asparagus from the barbeque the night before.

Ingredients
Serves: 6- 2 cups firm yellow sweet corn (about 3 ears), roasted on the ear on the BBQ, cut from cobb
- 1 1/2 cups grilled asparagus, crisp-tender, sliced in 1/2-inch pieces
- 3/4 cup chopped spring Walla Walla sweet onion (or regular Walla Walla)
- Dressing:
- 1/4 cup olive oil
- juice of 1 lime
- 1 teaspoon roasted garlic-flavored seasoned rice vinegar
- 1 teaspoon Lawry’s(R) seasoned salt
- 1 teaspoon ground cumin
- 1 tablespoon chopped fresh cilantro
Preparation method
Prep: 10 mins | Extra time: 2 hours, chilling1. Combine grilled corn, asparagus, and onion in mixing bowl.
2. In separate mixing bowl, combine olive oil, lime, vinegar, seasoned salt, cumin, and cilantro. Whisk, then pour over vegetables.
3. Chill salad thoroughly, about 2 hours, and serve.
