- Ingredients for Waffles
- 2 cups Flour
- 2 cups Milk
- 2 teaspoons Baking Powder
- 3 Eggs (separated)
- 2 Tablespoons Powdered Sugar
- 2 Tablespoons Vanilla
- 1 Tablespoon Oil
- Pinch of salt
- Ingredients for Blueberry Sauce
- 4 teaspoons corn starch
- 1/2 cup sugar
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 2/3 cup water
- 1-1/3 cup of frozen blueberries
- 2 Tablespoons lemon juice
Waffles:Combine all ingredients except egg whites. Separately beat egg whites until stiff. Fold egg whites into batter mixture. Do not over mix! Ladle into hot waffle iron (be sure to spray with ‘Pam’ first) Bake until dry – serve hot with fruit, syrup or both.
Blueberry Sauce:Mix corn starch, sugar, nutmeg, and cinnamon and then slowly stir in water. Cook over a high heat, beating with a wire whisk until clear and thick. Cook over medium heat for a further 2 minutes. Add frozen blueberries and lemon juice. Heat through and serve over waffles
