Frosting made for West Virginia Apple Cake

4 Tablespoons softened butter
3 cups confectioners sugar
2 Tablespoons lemon juice
2 Tablespoons cold water
1 pinch of salt

In a mixing bowl, cream butter and add sugar gradually, creaming thoroughly. Beat in lemon juice and enough cold water to make a spreading consistency. Beat in salt. Makes approximately 3 cups of frosting.

Makes a great holiday dessert. Just add Noel to its name and decorate each piece with holly fashioned from red and green candied fruit.
