Vegetarian thai red curry paste recipe details
Ingredients
3 tbsp | grapeseed oil |
2 tbsp | fresh coriander |
2 tbsp | ground coriander |
1 tbsp | ground cumin |
1 tsp | turmeric |
1 tsp | black peppercorns, crushed |
1 tsp | salt |
2 stalks | lemon grass, chopped or half of a small (90 g) jar |
4 clove(s) | garlic, roughly chopped |
10 large | fresh red chillies, deseeded and roughly chopped |
fresh root ginger, 5 cm, roughly chopped |
Instructions
Blend all the ingredients (except the oil) in a blender or food processor.Heat the oil in a large non-stick pan, add the blended paste and fry over a low heat for about 5 mins until fragrant.
Allow to cool completely and store in an airtight jar in refridgerator.
Will keep about 3 weeks or freeze and use as required.
The heat of this paste will depend on the chillies used, leave in seeds for a hotter paste. It should make about 12 tablespoons but this will depend on the size of shallots and chillies used.
