Ingredients

3 tbsp grapeseed oil
2 tbsp fresh coriander
2 tbsp ground coriander
1 tbsp ground cumin
1 tsp turmeric
1 tsp black peppercorns, crushed
1 tsp salt
2 stalks lemon grass, chopped or half of a small (90 g) jar
4 clove(s) garlic, roughly chopped
10 large fresh red chillies, deseeded and roughly chopped
fresh root ginger, 5 cm, roughly chopped

Instructions

Blend all the ingredients (except the oil) in a blender or food processor.

Heat the oil in a large non-stick pan, add the blended paste and fry over a low heat for about 5 mins until fragrant.

Allow to cool completely and store in an airtight jar in refridgerator.

Will keep about 3 weeks or freeze and use as required.

The heat of this paste will depend on the chillies used, leave in seeds for a hotter paste. It should make about 12 tablespoons but this will depend on the size of shallots and chillies used.
