Hot cream of parsnip and potato soup recipe details
Ingredients
400 g | parsnip, peeled and diced |
400 g | potatoes, peeled and diced |
1 | onion, chopped |
salt and freshly ground black pepper | |
1 tsp | chili flakes |
900 ml | vegetable stock |
125 g | crème fraîche |
1 tbsp | olive oil |
Instructions
In a saucepan, heat the oil and sauté the onions until lucent. Add parsnip and potatoes and cook stirring for 2-3 minutes. Pour in the stock, add the chili flakes and bring to a boil. Reduce the heat, cover and simmer for 15 minutes.Purée the soup with a hand blender. Stir in the Crème fraîche and reheat. Season to taste with salt, pepper and more chili flakes if you like.
