Vegetarian thai green curry paste recipe details
Ingredients
10 large | fresh green chillies, deseeded and roughly chopped |
8 clove(s) | garlic, roughly chopped |
2 stalk(s) | lemon grass, chopped or half of a small (90 g) jar |
4 large | kaffir lime leaves, -roughly chopped or the rind of 1/2 lime |
2 bulb(s) | shallots, roughly chopped |
3 tbsp | fresh coriander |
fresh root ginger, 2.5 cm, roughly chopped | |
1 tsp | ground cumin |
2 tsp | ground coriander |
1 tsp | black peppercorns, crushed |
1 tbsp | lime juice |
Instructions
Place all the ingredients in a blender or food processor and blend to a paste.Will keep about 3 weeks if stored in an airtight container in refridgerator, or freeze and use as required. I normally use 3 tablespoons per curry, but this can be altered to suit your own taste.
This makes about 10 tablespoons of paste, with strength dependent on chillies used. Leaving in chilli seeds will produce a hotter paste.
