Ingredients

1 packet(s) filo pastry
6 large potatoes
1 cup(s) frozen green peas
4 clove(s) garlic
3 stalk(s) spring onion
2 tbsp fresh ginger, grated
1 tsp cumin seeds
½ tsp chili flakes
½ tsp crushed black pepper
1 tsp garam masala
salt
oil
butter, melted or cooking spray

Instructions

For the filling:
Peel, boil and mash the potatoes. Heat a little oil in a pan and fry the cumin seeds. Add the chili flakes, Garam Masala and the black pepper. Then add the spring onion, garlic and ginger and cook for 2-3 minutes. Add the mashed potatoes and the peas. Mix well and season to taste with salt. Cook on low heat for approximately 6-8 minutes. Set aside and allow to cool a bit.

To prepare the Samosas:
Put always two filo pastry sheets on top of each other and cut them in half. Brush with melted butter or spray with cooking spray. Put one tablespoon of the filling onto one end. Now fold the pastry in half over the filling, spray with cooking spray or brush with melted butter, then fold one corner down, then fold the whole corner with the filling over as many times as needed until the pastry is used up and you have a triangular package. Put on a baking sheet and spray again. Go on in the same way with all the pastry and filling, until used up. Bake the Samosas at 180°C for 20-30 minutes or until light brown.

Serve with Raita.
