Vegetable pie recipe details
Ingredients
6 | bell peppers, 2 red, 2 green, 2 yellow, diced |
1 medium | aubergine, cut into 1cm cubes |
1 medium | red onion, thinly sliced |
8 | cherry tomatoes, halved |
2 clove(s) | garlic, minced |
2 tbsp | oilve oil |
½ tsp | sugar |
4 large | eggs |
some | milk |
4 tbsp | yoghurt |
salt and pepper | |
1 tbsp | oregano |
8 sheet(s) | filo pastry |
50 g | butter |
225 g | grated farmer’s cheese |
1 bunch(es) | basil |
Instructions
Preheat the oven to 200°C.In a skillet heat the oil, add the vegetables, sprinkle with sugar and cook until the vegetables are done, but still a bit firm to the bite . Add the tomatoes and allow to cool.
Mix the yoghurt with three eggs, season with salt, pepper and oregano and set aside.
Melt the butter. Brush a shallow casserole dish with butter and line it with a sheet of the filo pastry. The sheet should be large enough to widely overlap the rim of the dish. Brush the pastry with butter. Layer with the remaining pastry sheets and brush each layer with butter.
Spoon half of the vegetables onto the pastry, then sprinkle with the cheese and basil leaves. Spoon in the remaining vegetable mixture. Pour the yoghurt mixture on top and cover with the overlapping pastry.
Beat the remaining egg with some milk and brush the pie with the egg wash. Bake for 30 minutes.
Serve warm or cold.
