Vegetable Stuffed Baked Potatoes recipe

|2||tomatoes, peeled, seeded and finely diced|
|1 small||courgette, trimmed and finely diced|
|1||yellow bell pepper, cleaned and finely diced|
|1 bunch(es)||parsley, chopped|
|150 g||sour cream|
|herb salt and pepper|
|125 g||Mozzarella cheese|
Cook the potatoes in salted water for about 25 minutes until done.
Combine the diced vegetables with parsley and sour cream. Season to taste the mixture with herb salt, pepper and oregano.
Drain the potatoes and cut off the top third of each. Scoop out a little of the flesh with a teaspoon. Stuff the potatoes with the vegetable mixture and place a slice of the Mozzarella cheese on top.
Transfer the stuffed potatoes in the preheated oven at 200°C (fan assisted 180°C) and bake for about 10 minutes or until the cheese has melted.
