Vegetable stir fry recipe details
Ingredients
3 small | potatoes |
1 small | zucchini |
1 small | eggplant |
2 small | tomatoes |
1 clove(s) | garlic |
½ tsp | sea salt (fleur de sel) |
1 tbsp | sesame oil |
1 tbsp | dried sage |
½ tsp | dried rosemary |
Feta cheese |
Instructions
Peel and slice the potatoes. Cook in boiling water (not salted) until done, this will take 5 to 10 minutes, then drain.Wash zucchini, eggplant and tomatoes. Slice the zucchini and cut tomatoes and eggplant in pieces.
Heat the sesame oil in a stir-fry pan, place all vegetables and the potatoes in the pan and season with fleur de sel. Peel and press garlic and add to the vegetables, add sage and rosemary. Stir-fry for 10 minutes.
To serve, crumble some Feta cheese over the dish.
