Vegetable stew with coconut flavour recipe details
Ingredients
100 g | mangetout |
100 g | broccoli florets |
100 g | carrot, peeled and sliced |
100 g | cauliflower florets |
170 ml | coconut milk |
2 cup(s) | vegetable stock |
1 tbsp | coconut flakes |
salt and freshly ground black pepper | |
freshly ground nutmeg | |
4 | spring onions, thinly sliced |
some | oil |
Instructions
In a saucepan combine the stock, 2 tablespoons of oil and the vegetables. Bring to a boil. Reduce the heat. Stir in the coconut flakes. Season with salt, pepper and nutmeg. Cover and simmer for 8-10 minutes.Pour in the coconut milk and bring to a boil again. Garnish with the spring onions and serve with rice.
