Vegetable soup with cheese croutons recipe details
Ingredients
1 medium | courgette, diced |
2 | spring onions, sliced |
4 slice(s) | toast, roasted and cut into cubes |
50 g | freshly grated cheese |
1 tbsp | oil |
1 l | vegetable stock |
salt and freshly ground black pepper | |
1 | carrot, diced |
1 tbsp | parsley, chopped |
Instructions
Preheat the oven to 175°C. Place the toast cubes onto a lined baking tray, sprinkle with cheese and parsley and bake for 5 minutes, or until the cheese is melted and golden.In a pot, heat the oil and sauté the vegetables for some minutes. Pour in the stock and bring to a boil. Cook for approximately 5 minutes. Season to taste with salt and pepper.
Pour the vegetable soup into soup plates and top with the cheese croûtons.
