Ingredients
600 g | sweet potatoes, peeled |
300 g | onions, chopped |
200 g | carrots, chopped |
1 tbsp | olive oil |
60 g | sesame seed paste, tahini |
salt and pepper, to taste |
Instructions
Preheat oven to 180°C.Combine potatoes, onions, carrots and olive oil in a large bowl and toss together. Place sweet potato mixture in a pan and bake at 350° for 1 hour or until tender.
Combine sweet potato mixture with tahini in a blender and process until smooth. Season with salt an pepper.
