Ingredients
¼ bulb(s) | fennel, diced |
1 | carrot, diced |
1 tsp | oil |
1 tsp | tomato puree |
350 ml | vegetable stock |
¼ | green bell pepper, diced |
½ | courgette, diced |
1 | tomato, diced |
2 | spring onions, sliced |
1 tsp | basil pesto |
Instructions
In a saucepan, heat the oil. Sauté the fennel, bell peppers. courgettes, onions and carrots for 2 minutes. Add the tomato purée and cook stirring for a minute. Add the stock and the tomatoes and bring to a boil. Cover and cook over low heat for 10 minutes.Ladle into a soup plate and serve garnished with a dab of pesto.
