Vegetable casserole recipe details
Ingredients
600 g | potatoes, peeled and diced |
salt and pepper | |
425 g | canned green beans, drained |
5 | tomatoes, diced |
3 | shallots, sliced |
1 tbsp | oil |
120 g | cream cheese |
60 g | grated cheese (Cheddar or Gouda) |
some | butter |
2 tbsp | parsley, chopped |
1 handful | black olives |
some | savory |
Instructions
Cook the potatoes in salted water until done. Drain.Heat the oil and sauté the shallots. Mix together the cream cheese and the grated cheese. Preheat the oven to 180°C.
Divide half of the tomato slices on the bottom of a buttered casserole dish. Layer with the potatoes, green beans, fried shallots and the remaining tomatoes. Season with salt, pepper and savory.
Sprinkle with the black olives and divide equally the cream cheese on top. Bake for 20-30 minutes. Serve garnished with parsley.
