Vegetable and omelette salad recipe details
Ingredients
75 g | cauliflower, in florets |
250 g | green beans, frozen and thawed |
100 g | cherry tomatoes, halved |
salt and freshly ground black pepper | |
30 g | rocket |
1 tbsp | crème fraîche |
1 tbsp | wine vinegar |
1 tsp | mustard |
3 tbsp | water |
2 tbsp | chives, chopped |
1 tbsp | basil, chopped |
1 tbsp | parsley, chopped |
2 | eggs |
2 tbsp | sparkling water |
40 g | blue cheese, diced |
1 tsp | butter |
Instructions
Cook the cauliflower and the beans in salted water for 8 minutes. Drain and allow to cool.Mix together the crème fraîche, vinegar, mustard, water, chives, basil and the parsley. Season to taste with salt and pepper.
Separate the eggs. Mix together the egg yolks and the sparkling water. Whisk until frothy. Whisk the egg whites with some salt until stiff. Fold the beaten egg white and the cheese in the egg yolk mixture.
In a pan, melt the butter. Add the batter and fry the omelette from both sides until golden.
In a salad bowl combine the vegetables with rocket and the dressing and toss. Cut the omelette into stripes. Serve the salad topped with the omelette stripes.
