Vegan nut triangles recipe details
Ingredients
For the dough: | |
300 g | all-purpose flour |
100 g | sugar |
1 packet(s) | vanilla sugar |
2 tbsp | flaxseed |
30 ml | hot water |
130 g | margarine |
1 tsp | baking powder |
To spread: | |
7 tbsp | apricot jam |
For the topping: | |
200 g | sugar |
200 g | margarine |
2 packet(s) | vanilla sugar |
4 tbsp | water |
200 g | ground almonds |
200 g | ground hazelnuts |

Instructions
To prepare the substitute for egg:Mix the flaxseed with the hot water and puree with a hand blender until the mixture gets really sticky.
To prepare the nut triangles:
Mix the flaxseed mixture with the remaining ingredients for the dough. Knead until the dough is smooth and pliable. Roll out on a baking tray and evenly spread the apricot jam on top.
Preheat a fan oven to 175°C.
Melt the margarine in a pot, add the sugar, vanilla sugar and water. Bring to a boil, then stir over gentle heat until the mixture caramelises to light brown. Remove the pan from heat and fold in the almonds and hazelnuts. Evenly spread the mixture over the apricot jam layer.
Bake in the hot fan oven for 30 minutes.
Slice the cake when still warm into squares of 8-10 cm and cut into halves to get triangles. Melt the couverture and brush the corners of the cookies with chocolate.
