Veal roulades with artichoke filling recipe details
Ingredients
2 | artichokes |
salt and pepper | |
1 | lemon, juiced |
50 g | cooked ham |
80 g | butter |
8 | thin veal cutlets, approximately 400g |
2 tbsp | flour |
1 | onion, finely chopped |
2 tbsp | olive oil |
100 ml | white wine |
Instructions
Wash the artichokes and remove the external leaves, so that just the hearts remain. Bring 1 litre of water to the boil, add the lemon juice and blanch the artichoke hearts for approximately 5 minutes. Remove from the saucepan, drain well and quarter.Cut the ham into thin slices and combine with 40 g of softened butter. Season each cutlet with salt and pepper, spread with the butter and ham mixture and place one artichoke quarter on top. Roll up the cutlets, fix with a toothpick or secure with butcher’s string. Turn the roulades in flour.
Sauté the onions in the remaining butter until lucent. Add the olive oil and sear the veal roulades over high heat. Deglaze with the white wine, season to taste with salt and pepper, cover with a lid and simmer over low heat for 15 minutes. Then remove the lid and allow the sauce to thicken for approximately 5 minutes.
Serve the roulades with mashed potatoes.
