Ingredients
For the pastry: | |
250 g | soft butter |
200 g | sugar |
4 | eggs |
250 g | flour |
1 tsp | baking powder |
1 tsp | vanilla extract |
1 pinch(es) | salt |
For the frosting: | |
75 g | soft butter |
125 g | cream cheese |
1 ½ | vanilla pods, scratched out pulp only |
150 g | icing sugar |
For the decoration: | |
150 g | white chocolate |
1 tsp | coconut oil |
1 ½ | vanilla pods, scratched out pulp only |
dark chocolate chips or candy sprinkles |
Instructions
You need 40-45 lollipop sticks or wooden skewers and a bracket (e.g. a thick Styrofoam plate).Preheat the oven to 180°C.
For the pastry:
Cream together the softened butter and the sugar with an electric mixer for about 5 minutes at the highest level. Add the eggs, one at a time and whisk after each egg until incorporated.
In another bowl mix the flour with baking powder, vanilla extract and salt. Sift the flour mixture over the froth mixture and fold in.
Grease a loaf pan, pour in the batter and bake for 45- 50 minutes or until a wooden skewer comes out clean.
Remove the sponge cake from the oven and leave to cool completely.
For the frosting:
Cream together the softened butter and the cream cheese with an electric mixer. Add the vanilla pulp and the icing sugar.
Discard eventually hard and dark spots from the sponge cake. Into a large bowl finely crumble the cake with your hands. Mix thoroughly the crumbles with your hands with the frosting. Shape the mixture to 3-4cm balls and place the balls onto a plate. Refrigerate for at least 1 hour.
For the decoration:
Melt the white chocolate in a water bath and add the vanilla pulp. Dip ever a lollipop stick into the chocolate and fix a ball on top. If the chocolate is not smooth enough you might add some coconut oil.
Dip the Cake Pops into the melted chocolate until well coated. Keep the stick rolling in your hands until the chocolate is dry enough not to drip down anymore. Garnish with chocolate chips or candy sprinkles.
Put the cake pops into your bracket and place into the refrigerator until required.
