Ukrainian borscht recipe details
If you have a vegetable garden this is a must. Nothing BEETS (Yes, pun intended) the tasted of home grown veggies!! You will not be disappointed with the flavor as it bursts in your mouth! Enjoy this soup on a rainy day or a winter evening!!

Ingredients
Serves: 6- 2 cups chopped beets
- 1/2 cup diced carrots
- 1 cup shredded cabbage
- 1 cup diced potatoes
- 1 onion, minced
- salt to taste
- 3 bay leaves
- 1 cup tomato juice
- 1 quart beef broth
- handful fresh dill, chopped
- handful fresh parsley, chopped
- 6 tablespoons sour cream
Preparation method
Prep: 15 mins | Cook: 45 mins1. Place the beets, carrots, cabbage, potatoes, and onion into a soup pot, and season with the salt and bay leaves. Pour in the tomato juice and beef broth. Bring to a simmer, cover, and cook until the vegetables are tender, about 45 minutes.
2. Stir in the dill and parsley, and serve with a little bit of sour cream.
