Twice baked potatoes recipe details
- Ingredients
- 2 good-sized Idaho baking potatoes (if using smaller potatoes, allow 1 potato per person)
- 3 Tablespoons melted butter
- 1/2 cup American cheese, shredded (about 4 slices; can also use Vermont cheddar cheese)
- 1/4 cup hot milk or half & half
- 1/8 teaspoon pepper
Scrub, dry, and bake potatoes in 400-degree oven for 1 hour or until tender. Cut potato in half lengthwise and scoop out potato. Mash potatoes, with butter, hot milk, cheese, and pepper and beat until fluffy. (I use my Kitchen Aidmixer for this.) Sprinkle chopped parsley or paprika, contrasting with the color of vegetable you are using. Bake at 350 degrees for about 1/2 hour or so until brown.
