Tuscan potato pancakes recipe details
- Ingredients
- 4 cups cooked potatoes
- 1 cup cheddar cheese
- 1/2 cup sauteed julienne of red and green peppers
- 2 eggs
- Salt and pepper
- Cornmeal
- Olive oil
Combine potatoes, piperade, cheese, eggs, and seasoning. Form into patties and coat in corn meal. Saute in oil until brown and crispy on both sides.
