Turnovers with spinach filling recipe details
Ingredients
½ bunch(es) | parsley, chopped, some sprigs reserved for garnishing |
½ bunch(es) | chives, chopped |
300 g | sour cream |
salt and freshly ground black pepper | |
1 | onion, chopped |
1 clove(s) | garlic, chopped |
500 g | curd cheese |
1 l | oil, for deep-frying |
50 g | bacon, diced |
250 g | spinach, washed and spin dried |
1 tbsp | oil |
1 tbsp | breadcrumbs |

125 ml | milk |
1 tbsp | butter |
1 | potato, cooked and peeled |
250 g | wheat flour |
250 g | rye flour |
1 medium | egg |
Instructions
Mix together the herbs and the sour cream. Season to taste with salt and pepper.In a saucepan, heat 1 tablespoon of oil. Sauté the onion and the bacon until lucent. Add the garlic and the spinach. Cook stirring until the spinach has wilted. Take from heat and allow to cool a bit. Stir the curd cheese and the breadcrumbs into the spinach. Season to taste with salt, pepper and nutmeg.
Bring the milk and the butter to a boil. Mash the potato finely with a fork. Combine the mashed potato, the wheat and the rye flour, a good pinch of salt, the milk mixture and 125ml of water. Knead until the dough is smooth and pliable.
Thinly roll out the dough on a floured surface. Cut out circles until all of the dough is used up. Whisk the egg with a drop of water. Place 1 teaspoon of spinach mixture into the middle of each circle. Brush the edges with egg. Fold over the circles and press together the edges tightly.
In a large saucepan, heat the oil to 170°C. Carefully add the turnovers and deep-fry until golden brown. Drain on kitchen paper.
Serve with the herb dip, garnished with some parsley leaves.
