Potato turnip mash with chorizo recipe details
Ingredients
500 g | turnips |
4 | potatoes, medium size |
1 tbsp | ginger, grated |
250 ml | coconut milk |
1 tsp | chili flakes |
salt and pepper | |
some | stock powder |
some | water |
1 tbsp | lime juice |
1 bunch(es) | scallions |
300 g | chorizo |
Instructions
Peel potatoes and turnips and cut them into small dices. Transfer into a pot, add coconut milk and ginger as well as some salt and pepper and bring to a boil. You may need to add some water and stock powder.While the vegetables are cooking, clean scallions and cut them into 5 cm long pieces. Slice chorizo.
Heat some oil in a pan, and fry chorizo until the slices are nicely brown. Add scallions and stir briefly. You may need to add a little bit of salt, depending on the quality of the chorizo.
The turnip and potato slices should be ready after 15 to 20 minutes. Add chili flakes, and pound the vegetables into a purée, some pieces should remain. You may need to add more stock.
Season to your taste using some salt and pepper, and add some lemon juice.
Arrange the purée on plates, and sprinkle with chorizo slices and scallions.
