Turnip soup recipe details
Ingredients
1 large | turnip |
2 stalk(s) | celery, chopped |
1 medium | onion, chopped |
2 | potatoes, peeled, diced |
2 tbsp | butter |
800 ml | chicken broth |
1 tbsp | mayonnaise |
1 tbsp | fresh parsely, chopped |
90 ml | single cream |
lemon juice | |
salt and pepper, to taste |
Instructions
Melt butter in a saucepan, and sauté onion and celery until soft. Add turnip and potatoes, mayonnaise sauce and chopped parsley and continue cooking. Stir occasionally.Add chicken broth and season with salt and pepper.
When all vegetables are tender, remove from heat and process the soup in bathes in a blender until smooth.
Pour soup back into the pan and cook for 30 minutes on medium heat.
To serve, add lemon juice and cream.
