South West Style Guacamole Omelet recipe
- Prepare Guacamole as follows:
- 2 ripe avocados
- 1/4 cup sour cream
- 1 teaspoon minced garlic
- 1/4 cup of grated cheese
- 2 Tablespoons salsa
- 1 Tablespoon of lime juice
- salt and pepper to taste
- tortilla chips
- For Two Omelets:
- 4 eggs
- 2 Tablespoons whole milk
- 2 Tablespoons butter
Instructions:
Melt the butter, half in each skillet. Beat eggs and milk together and pour half in each skillet. When eggs are almost firm, spoon in one quarter of guacamole in each and one half of the cheese. Fold and cook for another minute or two. Slide onto plate, garnish with tortilla chips and extra guacamole.
