Ingredients
Serves: 4- 1 1/2 cups uncooked penne pasta
- 1/4 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 egg, lightly beaten
- 1 teaspoon Italian seasoning
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/2 pound lean ground turkey
- 1 1/2 cup marinara sauce
- 1/2 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
Preparation method
Prep: 40 mins | Cook: 30 mins1. Bring a saucepan of salted water to boil over high heat. Add pasta and cook until noodles are al dente, according to package instructions. Drain.
2. Preheat oven to 350 degrees F; coat a baking sheet and an 8×8-inch baking dish with nonstick cooking spray.
3. In a bowl, combine breadcrumbs with 1/4 cup Parmesan cheese, egg, Italian seasoning, onion powder, salt, garlic powder, and finally the turkey. Form into 1/2-inch balls.
4. Arrange the meatballs on prepared baking sheet. Bake for about 10 minutes, until turkey is no longer pink.
5. Toss meatballs with marinara sauce. Pour half of the meatballs into the prepared baking dish and sprinkle with half of the penne, half of the cottage cheese, and half of the mozzarella. Top with the rest of the meatballs, penne, and cheese.
6. Cover the casserole with aluminum foil. Bake for 30 minutes, then serve.
