This original “what’s-on-hand” recipe is a must-try! As we were first sampling this Italian zinger, our mp3 player randomly played “Mambo Italiano” as sung by Rosemary Clooney! Well, the name stuck, and is certainly an easy and suprisingly flavorful meal — no leftovers here, we ate the whole pan!

Ingredients
Serves: 6- 3 tablespoons olive oil, divided
- 2 cups uncooked penne noodles
- 2 cups uncooked rainbow rotini or bowtie noodles
- 1/2 cup chopped red onion
- 2 cups yellow squash or zucchini
- 1-1/2 cup red seedless grapes
- 3 pounds thawed ground turkey (or other meat)
- 3 cloves garlic
- 1 teaspoon salt (optional)
- 1/4 teaspoon crushed red pepper (or to taste)
- dash black pepper
- 1 (10.75 ounce) can cream of broccoli soup
- 1 cup water (lukewarm)
- 1 cup white wine
- 1/3 cup cider vinegar (optional)
- 1 cup ricotta cheese
- 1 cup Parmesan cheese
- 3/4 cups crushed croutons
Preparation method
Prep: 20 mins | Cook: 35 mins1. Preheat oven to 350 degrees F (175 degrees C). Coat 13x9x1 inch pan with 1/2 tbsp olive oil and set aside.
2. Boil pasta until only half-cooked.
3. While pasta is boiling, dice red onion, slice zucchini into half-medallions and halve grapes lengthwise; set each aside.
4. When pasta is half-cooked, rinse with cold water to cease cooking, drain well and set aside.
5. Form turkey into meatballs and brown in 1/2 tablespoon olive oil along with onions, garlic, salt, red pepper, and black pepper to taste.
6. Combine in bowl: cream of broccoli soup, water, wine, cider vinegar, ricotta cheese, 3/4 cup Parmesan cheese and 2 tablespoons olive oil, set aside.
7. Pour drained noodles into pre-greased pan and toss with meat, zucchini and most of grapes.
8. Pour broccoli soup mixture over noodle mixture. Top with crushed croutons, remaining grapes and 1/4 cup Parmesan cheese.
9. Bake in the preheated oven until bubbly, 25 to 30 minutes. Enjoy a glass of wine. Let stand for five minutes before serving.
