Ingredients
600 ml | double cream |
100 g | icing sugar |
1 tsp | vanilla extract |
1 tsp | dark rum |
100 g | amaretti biscuits or almond macaroons, crushed |
2 large | egg whites |
50 g | flaked almonds, lightly toasted |
12 | cherries, either glacé or cocktail, as available |
Instructions
I received this recipe in Italian, which was translated with the assistance of a friend and an on-line translator. It is something I have eaten a number of times, but not always to the same recipe.Please note that this recipe utilises raw egg whites and it may be unsuitable for certain individuals.
Prepare 12 decorative muffin or petit four cases and place within a muffin tin.
In a bowl, whisk the cream until just stiff. Add the sugar, vanilla and rum and continue to whisk until stiff peaks form. Fold in the crushed amaretti.
In a clean bowl, whisk the egg whites until stiff peaks form and fold carefully into the cream mixture. Using either a scoop or tablespoon, divide the mixture between the cases, piling high to a peak if possible. Freeze, keeping reasonably level, for at least 2-3 hours or until quite firm.
Immediately prior to serving, sprinkle each with toasted almonds. Place a cherry on top and serve immediately.
Options:
Replace the almonds with toasted chopped hazelnuts or pistachios if wished.
