Ingredients
Serves: 4- 12 (6-inch) corn tortillas
- 2 eggs
- 4 pork chops, flattened to 1/4-inch thickness
- Salt and pepper
- 1/4 cup vegetable oil
Preparation method
Prep: 10 mins | Cook: 25 mins1. Pulse tortillas in a food processor until ground into coarse crumbs. Place in a shallow pie pan.
2. Lightly beat the eggs in a second shallow pie pan.
3. Sprinkle pork with salt and pepper, coat with egg, then dredge in tortilla crumbs.
4. Pour 2 tablespoons oil into a skillet and set over medium heat. Cook 2 of the dredged pork in hot oil for about 12 minutes, flipping midway through cooking time; transfer to a plate and cover with foil. Repeat with remaining pork.
