Ingredients
500 g | Tortellini |
250 ml | vegetable stock |
100 ml | single cream |
125 g | cream cheese |
250 g | mixed vegetables, e.g. carrots, cauliflower, broccoli |
1 tbsp | parsley, chopped |
120 g | Parmesan cheese, freshly grated |
salt and freshly ground black pepper, to taste |
Instructions
Cook the pasta in salted water until al dente.In a large saucepan, heat the vegetable stock with single cream and cream cheese. Reduce the heat and stir in the vegetables. Cook over medium heat for 10 minutes. Add the cooked tortellini and simmer for a minute. Stir in the parsley.
Season to taste with salt and pepper and serve together with the Parmesan cheese.
