For the Stuffing: | |
50 g | fresh breadcrumbs |
2 tbsp | parsley, finely chopped |
25 g | walnuts, roughly chopped |
25 g | mushrooms, roughly chopped |
25 g | Stilton, crumbled |
1 medium | egg |
salt and black pepper | |
120 ml | port, optional |
Instructions
Oven temperature: Gas mark 1, 140°C, 275°F
Take topside and calculate the cooking time(20 minutes + 20minutes per kilo). Place on a rack or roasting dish and open roast in a pre-heated oven.
Stuffing:
Mix the breadcrumbs, parsley, walnuts, mushrooms, stilton, egg, salt & pepper.(add the port if you require).
Divide the mixture into eight and shape into balls. Place the stuffing balls on a baking tray and cook for the last 15 minutes of the roasting time.
