Tonka bean creme caramel recipe details
Ingredients1. Tonka beans, grated with micro plane (2)
2. scalded milk (5c)
3. water (1/4c for caramel)
4. sugar (2/3c for caramel)
5. egg yolks (8)
6. eggs (4)
7. sugar (1c for custard)
Method of preparation
1. First heat the oven to 350 degrees F. Take a stainless steel bowl, add eggs and 1 cup of sugar in it and mix them.
2. Take a small saucepan, put milk in it and add grated tonka beans in it. Place the pan over medium high heat. Heat milk until it begins to boil. Take off the pan from heat.
3. Then pour milk over the egg mixture. Mix it well and then keep it to cool for few minutes. In the same time make caramel, take a small pot. Add water and 1 cup of sugar in it. Cook it over high heat. Wait until the sugar gets caramelized and changes to nut brown color.
4. Take off the pan from heat and pour the caramel into the bottom of each ramekin. Keep the ramekins aside to set. Then pour the custard mix over the caramel ramekins.
5. Now cook in a bain-marie filled half way with water. When it gets cooked then place it in refrigerator for overnight. Next day remove the ramekins and place the caramels on serving plate to serve.
