800 g | cherry tomatoes |
For the Dressing: | |
115 g | blue cheese, crumbled |
120 ml | buttermilk |
2 tbsp | olive oil |
2 tbsp | fresh lemon juice |
1 bunch(es) | fresh chives, minced |
salt and freshly ground pepper, to taste |
Instructions
To prepare the dressing:Combine the blue cheese, buttermilk, and olive oil in a medium bowl and stir. Use a fork to mash to break up the cheese. Season with the lemon juice, salt, pepper, and chives. Set aside.
To prepare the dish:
Wash the tomatoes and pat dry. Slice each tomato in half lengthwise and season with salt and pepper.
Add the tomatoes to the dressing mixture and toss gently to combine.
