Tomato soup with chorizo recipe details
Ingredients
1 tbsp | olive oil |
3 | chorizos, spanish pork sausages, about 360 g |
280 g | red onion, diced |
140 g | zucchini, diced |
200 g | potatoes, washed and diced |
250 g | red capsicum, diced |
150 g | celery, diced |
3 clove(s) | garlic, finely sliced |
2 small | red chillies, finely sliced |
800 g | tomatoes, canned, diced |
375 ml | chicken stock or vegetable stock |
some | salt |
some | freshly ground black pepper |
some | chilli powder |
Instructions
Cut the sausages in halves lenghtwise, then in little pieces.Heat some oil in a pot and fry the sausage pieces until they start to become brown and crispy.
Add the vegetables and fry for about 5 minutes.
Add tomatoes and stock and let simmer for about 15 minutes. Check vegetables. Season to taste.
Serve with crusty bread.
