|3 tbsp||olive oil|
|1 stick(s)||celery, chopped|
|1 can(s)||tomatoes, peeled and diced|
|3 clove(s)||black garlic, crushed|
|1 tbsp||tomato puree|
|2 tsp||caster sugar|
|1 tsp||dried oregano|
|salt and pepper|
In a pan heat the oil. Sauté onion and celery until soft. Add tomato purée and the oregano and cook stirring for a minute. Add garlic and the canned tomatoes and bring to a boil. Season with salt, pepper and sugar.
Cook over low heat for 45 minutes. Purée the sauce. Adjust the seasoning. Serve with pasta.
