Ingredients

250 g cherry tomatoes, sliced
1 large red chilli, finely chopped
1 small onion, finely chopped
2 clove(s) garlic, finely chopped
1 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp balsamic vinegar
1 tbsp parsley, finely chopped
some salt
some freshly ground black pepper

Instructions

Whisk oil, lemon juice, vinegar and parsley.

Combine tomatoes, chilli, onion, garlic and mix well with the vinaigrette. Season to taste.

Cover and refrigerate until ready to serve.

Note: For a spicy salsa add 1 small red chilli, deseeded and chopped. Leave the seeds in for more heat.
