Tomato onion compote recipe details
Ingredients
16 | onions, peeled, halved |
1 tbsp | olive oil |
400 g | tomatoes, diced |
1 tsp | balsamic vinegar |
1 tsp | dried basil |
salt and pepper, to taste |
Instructions
In a large skillet, heat olive oil over low heat. Add onions and cook until onions are soft, about 8 to 10 minutes. Season to taste with salt and pepper.Drain the tomatoes and add the tomato juice, wine, vinegar, and dried basil to the skillet.
Reduce heat to simmer and cook for 15 minutes, stirring occasionally. Add chopped tomatoes and set aside. Cook for another 5-10 minutes.
