Tomato broccoli omelette recipe details
Ingredients
3 medium | eggs |
1 tsp | butter |
100 g | broccoli |
1 large | tomato, diced |
2 small | green onions, chopped |
salt and pepper to taste |
Instructions
Beat eggs until frothy and season with salt and pepper.Heat butter in a non-stick skillet over low heat. Add beaten eggs and then the broccoli. Cook slowly, lifting edges to let uncooked egg run underneath.
When omelette is almost cooked, cover and continue cooking until surface dries.
Fold 1/3 of the omelette over the centre and roll the omelette out of the pan onto a serving plate. Top with diced tomato and sliced green onions.
