Smoked cod in garlic onion and tomato sauce with crisp cheese topping.
Ready in: 1 hour
Ingredients
Serves: 2- 1/2 large onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 (15 ounce) can chopped tomatoes, drained
- 1/2 cup fish stock
- 3 slices bread, made into crumbs
- 1/4 pound Cheddar cheese, shredded
- 1 pound smoked haddock
Preparation method
Prep: 30 mins | Cook: 30 mins1. Preheat oven to 400 degrees F (200 degrees C).
2. Fry onion in olive oil in a small frying pan until golden and soft. Add garlic and fry for 5 mins gently. Add chopped tomatoes and bring to boil. Add fish stock.
3. Mix bread crumbs and cheese in a blender.
4. Lay fish in two pieces in retangular pie dish.
5. Pour tomato and onion mix over fish. Spread bread crumb mix on top.
6. Bake in the preheated oven for 25 minutes. Turn oven to Broil, and broil until golden brown and crisp on top, about 5 minutes.
