Tomato and roasted garlic soup recipe details
Ingredients

Parmesan cheese, grated |

Instructions
Preheat oven to 200°C.Transfer garlic cloves and tomato into an oven proof pan and drizzle with olive oil,sprinkle with salt and pepper and roast in the oven for 30-45 minutes.
After removing from the oven, squeeze out the softened garlic.
Pour a bit of oil into a saucepan and sauté onion until soft. Add vegetable stock and bring to boil.
Add remaining ingredients, except the Parmesan cheese, and cook for 5 minutes on medium heat and stir occasionally.
Remove from heat and leave to cool a little. Process in batches in a blender until smooth.
Pour the soup into serving bowls and sprinkle with Parmesan cheese.
