Tomato and bean salad with fried basil recipe details
Ingredients
15 g | basil leaves |
40 ml | extra vergin olive oil |
300 g | cherry tomatoes, halved |
1 can(s) | mixed beans, (400g) |
lemon juice | |
salt and freshly ground black pepper |
Instructions
Set 5 of the basil leaves aside. In a pan heat the oil and fry the remaining leaves briefly until crispy but not burnt.Drain and rinse the beans, drain again and place them into a bowl. Add the tomatoes, the basil and the oil and toss gently. Season to taste with lemon juice, salt and pepper.
Serve sprinkled with the remaining basil leaves.
