Ingredients
3 tsp | olive oil |
1 | onion |
1 | carrot |
200 g | green beans |
1 clove(s) | garlic |
½ | inch fresh ginger |
3 tbsp | peanut butter |
5 tbsp | water |
2 tsp | lemon juice |
2 tbsp | soy sauce |
2 tbsp | soya milk |
200 g | firm tofu |
Instructions
Cut the tofu into cubes and pan-fry in a frying pan until lightly browned then remove from the heat.
Finely slice the onion, chop the carrot, cut each end of the green beans and then cut into halves. Add two tea spoons of the olive oil to the frying pan. Fry off the onion, carrot and green beans for 4 minutes.
Crush the garlic clove and mince the inch of ginger.
Add the remaining oil to a seperate pan and fry off the garlic and ginger for a minute. Stir in the peanut butter and water until smooth, then add lemon juice, soy sauce and soya milk, mix well.
Add the tofu back to the stir-fry along with the peanut butter sauce and mix together. Serve with rice.
