Toffee cake recipe details
Ingredients
350 g | flour, self-rising, sifted |
140 g | butter |
170 g | castor sugar |
2 large | eggs |
120 ml | milk |
½ tsp | rum extract |
1 tsp | baking powder |
For the topping: | |
40 g | butter |
1 tbsp | flour, self-rising, sifted |
60 g | brown sugar |
60 g | pecans, chopped |
½ tsp | ginger, ground |
Instructions
Preheat oven to 180°C and grease a cake tin.Batter:
Combine sifted self-raising flour, baking powder, butter, caster sugar, eggs, milk and rum extract in a bowl. Beat well until smooth. Put into prepared tin.
Topping:
Beat together softened butter, sifted flour, brown sugar, chopped pecan nuts and ginger.
Bake for around 60 – 70 minutes or until skewer inserted in middle comes out clean. Cool in tin for 10 minutes and then turn out cake and leave to cool on wire rack.
